Nonna's Recipe

In honor of Nonna's 85th birthday, I forced Jonathan to cook me the dish we so cleverly refer to as "Nonna's Recipe." It was the first (and only) meal he cooked for me while we were dating. I was sick and so he asked his family for a recipe that was both simple and delicious. This staple from Nonna's cooking repertoire is what he prepared:

Ingredients:
egg noodles (1/2 bag)
extra virgin olive oil (EVOO)
minced garlic
sliced mushrooms
sliced peppers (we use 1 red, 1 yellow)
chopped green onions (1 bundle)
parmesan cheese
salt to taste

Directions:
Saute mushrooms in 2 teaspoons EVOO and less than a teaspoon of garlic on medium high heat for around 5 minutes.
Meanwhile, begin cooking noodles in separate pot.
Add peppers and a dash more garlic to pan with mushrooms. Saute until tender (we continue to add EVOO as it's absorbed by the veggies). Add green onions and cook together for 2 more minutes. Salt & pepper.
Drain noodles and then combine with saute mixture. Sprinkle with parmesan. Serve!

Cooking in progress:

To this day, Jonathan is solely responsible for preparing this meal. Is there anything sexier than a man cooking??

  1. UPDATE: It has occurred to me that many of you are probably confused by my references to Jonathan's "Nonna." Nonna — pronounced No-na — is Italian for grandmother. Josephine Thomas is originally from Friuli, which is in northern Italy. She moved here when she married Jonathan's grandfather, who I sadly never got to meet. One day I'll have to share a little about her history and the love story that brought her here. It's an amazing story — have your tissues handy, though!
